How to Make Jollof Rice TGK Style (Nigerian)

Ingredients
Easy cook long grain rice x4 cups
Can of chopped tomatoes ( or fresh tomatoes x4)
Red bell peppers x2
Red onions x2 1/2 ( you can use white onions if you don’t want your food to be too spicy)
Tomato puree x1 tube
Maggi cubes x3
Chicken seasoning
All purpose seasoning
Mixed herbs seasoning
Bay leaves ( Optional)
Oil
Method
1. Dice the half onion and then set aside as this will be used later
2. Pour the four cups of the rice into a plastic and wash thoroughly, to get rid of as much starch as possible as it can’t be washed later.
3. In the blender put : can tomatoes, peppers, scotch bonnet, onions and blend until smooth.
4. Set the stew aside.
5. Put a meduim/large pot on the stove leaving it on a medium heat.
6. Into the pot add oil, once it has heated add the onions that were chopped earlier.
7. Let the onions sweat for 10-15 minutes , then into the pot add 1/2- 3/4 of the tube of tomato puree and stir.
8.Let the onions and puree fry for five minutes. Make sure you stir it frequently.
9.Once the puree has fried add the blended peppers, stir in well.
10. To season the stew crush the maggi cubes, add one table spoon of the curry powder,the all purpose seasoning and the mixed herbs.
11. If you have bay leaves add 3 of them. Stir well and cover.
12.Leave the mixture to boil for 15 – 20 minutes.
13. The sauce should have thickened after a while, add in the washed rice and once again stir well.
14.Add in enough water to cover the rice to make it soft.
15. Leave the rice to cook on a low heat and check the rice every 20 minutes, stir it from the bottom up.
16. The jollof rice should be ready after 1 hour – 1 hour 30 minutes.
