How to make chewy cookies
This recipe will help you achieve soft, mouth-watering cookies! These cookies are a great thing to bake if you want a sweet treat.
Ingredients
Plain Flour
1 egg and 1 egg yolk
Coco Powder 200g (For double chocolate cookies)
Baking powder 2g
Caster sugar 100g
Brown sugar 210g
Vanilla essence 15ml
Unsalted butter 180g
1 or 2 Blocks of chocolate (For a rustic feel)
Pinch of salt
Method
- Pre-heat the oven to 170 degrees C, and line the baking trays with grease proof paper.
- Roughly chop the chocolate bar and set aside. I cut medium chunks by doing it diagonally both ways.
- In one bowl mix together the flour, baking powder, salt and the coco powder if double chocolate cookies are desired.
- In a different bowl mix together the butter (the butter mixes better if it is melted), brown and white sugar. Cream these ingredients together then beat the egg and vanilla.
- Into the bowl with the butter and sugar add in the flour mix. Add in the chocolate chips.
- Now that the cookie dough has been prepared, place it in the fridge for 20 minutes ( you can leave it overnight).
- Using an ice cream scoop, scoop a bit of dough then roll it into a ball then place it on the baking tray. Make sure that there is space between the balls as when it cooks it will flatten
- Repeat step 7 until all the dough has been rolled.
9.Place the tray in the oven for 15-20 minutes, the edges should be lightly toasted. Once this is achieved set it aside to cool down.
