
Lamb is such a beautiful meat that can been cooked in so many different ways and paired with many things! In this recipe the lamb is marinated with tangy peri peri sauce accompanied with a spicy cucumber salad.

Ingredients
Peri Peri Lamb Cutlets
-Lamb Cutlets
-Onion Salt
-Garlic Powder
-Lamb Seasoning
-Olive Oil
-Peri Peri sauce
Spicy Cucumber Salad
-Cucumber
-Chilli Flakes
-Soy Sauce
-Olive Oil
-Garlic Granules
-Jumbo Seasoning
Preparation Method
- Firstly, drizzle a little bit of olive oil on your lamb cutlets to act a glue when its time to season the meat. When this is done massage the oil into the lamb.
- Add a teaspoon of Onion Salt, garlic powder and a tablespoon of lamb seasoning. Once again massage this in, making sure that both sides are easily coated. Set the lamb aside so it can marinate for 30 mins – 1 hour (I normally try to leave it as long as possible).
- Put the oven on and set it at 200°C
- Now it’s time to make the spicy cucumber salad. Wash the cucumber, and peel thin slices of the cucumber.
- Once all the cucumber has been peeled, drizzle olive oil on the cucumber, and add a tablespoon into the bowl. Then mix the contents.
- Add a few drops of soy sauce, and a teaspoon of garlic granules and jumbo seasoning.
- Wrap the salad with cling film and leave it in the fridge to marinate.
- After this it’s finally time to cook the lamb. In a pan add a small amount of oil and place the lamb in the pan.
- Cook each side for 5-7 mins – if the lamb has less meat cook each side for 3-5 mins.
- The lamb should now be browned, if not cook it for a bit longer.
- Brush the lamb with Peri Peri sauce and put it in the oven for 20 – 30 mins.
- During this turn the lamb and brush the peri peri sauce on after 10-15 mins.
- After 30 mins the lamb should be done, serve the lamb with the spicy cucumber and enoy!
