Peri Peri Lamb Cutlets with Spicy Cucumber salad

Lamb is such a beautiful meat that can been cooked in so many different ways and paired with many things! In this recipe the lamb is marinated with tangy peri peri sauce accompanied with a spicy cucumber salad.

Serves : 2

Ingredients

Peri Peri Lamb Cutlets

-Lamb Cutlets

-Onion Salt

-Garlic Powder

-Lamb Seasoning

-Olive Oil

-Peri Peri sauce

Spicy Cucumber Salad

-Cucumber

-Chilli Flakes

-Soy Sauce

-Olive Oil

-Garlic Granules

-Jumbo Seasoning

Preparation Method

  1. Firstly, drizzle a little bit of olive oil on your lamb cutlets to act a glue when its time to season the meat. When this is done massage the oil into the lamb.
  2. Add a teaspoon of Onion Salt, garlic powder and a tablespoon of lamb seasoning. Once again massage this in, making sure that both sides are easily coated. Set the lamb aside so it can marinate for 30 mins – 1 hour (I normally try to leave it as long as possible).
  3. Put the oven on and set it at 200°C
  4. Now it’s time to make the spicy cucumber salad. Wash the cucumber, and peel thin slices of the cucumber.
  5. Once all the cucumber has been peeled, drizzle olive oil on the cucumber, and add a tablespoon into the bowl. Then mix the contents.
  6. Add a few drops of soy sauce, and a teaspoon of garlic granules and jumbo seasoning.
  7. Wrap the salad with cling film and leave it in the fridge to marinate.
  8. After this it’s finally time to cook the lamb.  In a pan add a small amount of oil and place the lamb in the pan.
  9. Cook each side for 5-7 mins – if the lamb has less meat cook each side for 3-5 mins.
  10. The lamb should now be browned, if not cook it for a bit longer.
  11. Brush the lamb with Peri Peri sauce and put it in the oven for 20 – 30 mins.
  12. During this turn the lamb and brush the peri peri sauce on after 10-15 mins.
  13. After 30 mins the lamb should be done, serve the lamb with the spicy cucumber and enoy!

How to make Fried Chicken

Ingredients

  • Pack of chicken thighs/drumsticks/ Wings
  • Flour
  • Eggs x2 or milk
  • Salt
  • White and Black Pepper
  • Cayenne pepper
  • Onion Powder
  • Chicken seasoning
  • Mixed herbs
  • Oil (sunflower/Vegetable)
  • Lemon

Utensils

  • Bowls or plastics to put the flour and eggs/Milk in
  • Medium-sized pot or pan

Method

  1. Put the cooker on a high heat and fill the pot or pan with oil and leave to heat. Be careful as you will be dealing with hot oil!
  1. Take the chicken out of the packet and wash the chicken with lemon (half), you can take the chicken skin off if wanted.
  1. Put the chicken in a bowl and set aside.
  1. Then put roughly 100g of plain flour in a bowl, within the bowl put a tablespoon of mixed herbs, a teaspoon of salt and pepper. Add in the cayenne pepper, onion powder, chicken seasoning, I measured it by eye. Mix the contents of the bowl.
  1. Crack two eggs and whisk it together.

6.If not using eggs, pour milk into a bowl, enough to cover the chicken when immersed.

  1.  Now you have to coat the chicken, first coat the chicken in the eggs or milk making sure that everything is covered.
  1. Then, coat the chicken in the flour also making sure that everything is covered

9.As the oil should be hot enough, the chicken can go straight into the pot, although check before you do this step that it is hot enough.( Graceful Tip drop a grain of rice into the oil and if it starts cooking the oil is ready for frying)

 

Repeat step 7 and 8 for the remaining chicken and put it in the pot.

 

Let the chicken fry until it is golden brown, then let the chicken drain on a plate with tissue.

BBQ Wraps

BBQ WRAPS 

These wraps are great as a snack or a meal!


This is yet again another student-friendly meal, as it is exam season this will be perfect for all students. 


Whenever I make these I pair it with homemade chips (Recipe available on my youtube channel and this blog). Or I  simply eat it alone! 


Ingredients

  • 2-5 chicken thighs (depending on the desired amount)
  • Tortilla wraps 
  • Finely chopped lettuce
  • Mayo 
  • BBQ sauce 
  • Sunflower oil 
  • Cayenne pepper
  • Chinese 5 spice 
  • All purpose seasoning 
  • Curry powder 
  • Chicken seasoning 
  • Garlic powder 

Method 

  1. As chicken is being handled in this recipe make sure you wash your hands prior or wear gloves!
  2. Also, before cooking switch the oven on to 200oc so that the oven will be warm by the time that it is needed.
  3. Drizzle a small amount of sunflower oil, enough to coat the chicken. This will make it easier to season the chicken 
  4. Then with all of the seasoning, season the chicken. You may find it easier to do 2-3 at a time. 
  5. Once the chicken has been seasoned wrap the chicken and leave it to marinate for 1 hour (I do advise leaving it for as long as possible as the outcome will be better!) 
  6. Once an hour has passed, place the chicken on a foil-lined oven tray and put the chicken in the oven.
  7. Once the chicken is in the oven for 15- 20 minutes turn the chicken so that the other side can cook. 
  8. Place it back in the oven for another 15 minutes.
  9. After this, check the chicken every 10 minutes to ensure that it doesn’t overheat.
  10.  If you’re not sure if the chicken is cooked poke a hole near bone and if it is still red keep it in.
  11. Now that the chicken is done, it is time to cut up the chicken – you should aim to make the chicken look shredded. Please be cautious as the chicken will be hot. 
  12. Next, you have to assemble the wrap, spread an even layer of mayo on the wrap.
  13. Then, add the lettuce and then some chicken, once this is done drizzle the bbq sauce on top.
  14. You can add in anything else that you like e.g. tomatoes, finely chopped onions etc
  15. The easier way to wrap the wrap is to fold in the sides, bring the bottom up and continue to roll.
  16. Repeat this process for all the wraps. 
  17. Then enjoy your wraps!

Calamari rings

How to make Calamari rings

 

Ingredients

  • Beaten Egg
  • Sunflower oil
  • Flour 
  • Paprika 
  • All purpose seasoning 
  • Salt 
  • Black pepper 
  • Squid/Calamari rings 

Method 

1. Season the calamari lightly with: paprika, all purpose seasoning, salt and pepper.

2. Dip the calamari into the flour mix, then dip it into the egg making sure that everything is fully covered. 

3.Then deep fry the calamari,in a pot heat the oil. Or you can use a deep fryer !

4. Fry the calamari for 2-4 minutes
