Glazed Pan Fried Lamb Cutlets with TGK Fried Rice


This recipe is very quick and tasty! I named the fried rice TGK fried rice as it isn’t the conventional way to make fried rice. I hope you enjoy!


Ingredients 

  • Lamb Cutlets (Purchased from my local butchers) 
  • Lamb Seasoning 
  • Garlic Powder 
  • Soy sauce 
  • Sriracha hot sauce 
  • Honey 
  • Oil (Sunflower or Olive) 
  • Brown rice 
  • Salt 
  • Black Pepper
  • Red chillis 
  • Desired vegetables ( Carrots, broccoli, onions, and garlic) 
  • Egg

Method 

  1. Start by prepping the lamb cutlets, add a dash of soy sauce and mix in. 
  2. Then, add a tablespoon of garlic powder and lamb seasoning ( depending on how many cutlets you have). Set this aside after seasoning to let it marinate. 
  3. Boil the brown rice in a small/medium pot – whilst this is boiling it’s time to cut the vegetables. 
  4. Chop onions, garlic, carrots, broccoli and red chillis finely. 
  5. After 10-15 minutes the rice should start bubbling – this is when it is time to wash the starch out of the rice. 
  6. This is done by running the rice under cold water and stirring until the water is clear ( Be careful whilst doing this so that the rice doesn’t pour). 
  7. Pour the water out of the rice until there is a little left above the rice.
  8. Add a pinch of salt to taste, and place back on the stove with the lid on. 
  9.  Whilst the rice is cooking, it is time to lightly fry all of the chopped vegetables. 
  10. Heat a pan with a bit of oil and add the veg, season with a pinch of salt, pepper and garlic powder. 
  11. Keep the veg on a low heat so that it does not burn, after 5- 10 minutes the vegetables should be done. 
  12. Set the veg aside, and crack an egg in the same pan ( add a bit more oil if the pan is dry) 
  13. Then, scramble the egg and set aside. 
  14. Check on the rice after 15-20 minutes it should be done- if it is not soft leave it for longer. 
  15. To the same pan add the vegetables and egg, then add the rice and mix it up. 
  16. Add a bit of salt, pepper and garlic powder then add soy sauce to give the rice the rich brown colour that is desired. 
  17. Now, it’s time to cook the lamb, in a pan add a bit of oil and add the lamb cutlets, cook each side for approximately 5 minutes. 
  18. Once the cutlets have browned, take them out of the pan so that the sauce can be made. 
  19. In the pan add a tablespoon of sriracha and honey and soy sauce for colour. 
  20. Stir the sauce and glaze the lamb with the sauce. 
  21. Then serve the food, I used sesame seed and finely chopped spring onions as garnish.

Pad Thai Recipe

Pad Thai

This recipe for pad thai is so quickly and easy. It has been my go-to when I want a tasty meal at uni!

I used the blue dragon pad thai kit.

Ingredients

1 egg (Beaten)

Diced chicken or peeled king prawns

Chopped garlic

Chopped onion

1 lime (garnish)

1 chili (Garnish)

1 Spring onion (Garnish)

Oil (olive or sunflower)

Glass noodles

Chopped Peanuts

Pad Thai sauce

Method

  1. Season your chicken with salt, white pepper, garlic powder, and chicken knorr cubes. Once this is done set aside.
  2. Then, boil the glass noodles for 7-10 minutes. Keep an eye on the noodles so that they do not over boil. Once this has boiled, drain the noodles and set aside.
  3. In a pot (wok preferred) pour oil, and once it is hot add the garlic, onion, and chicken.
  4. Make sure that you stir the chicken so that it does not stick to the bottom of the wok.
  5. Add the beaten egg to the wok and stir quickly so that it would scramble.
  6. Now it is time to add in the noodles and mix the contents of the wok together so that the flavors combine.
  7.    Add the pad thai sauce that comes in the pack and mix.

8  Then dish the pad thai, and add the chopped spring onion, chili, lime, and chopped peanuts.

How to make Pizza

This recipe is great for achieving tasty pizza! 


Ingredients 

600g Plain Flour 

3 packets of Yeast 

10ml Olive Oil 

250ml Warm water 

Salt 

Garlic Powder 

Thyme 

Oregano 

Tomato Puree 

Toppings (Chopped onion, Chicken Mushroom, etc)

Cheese 

Mozzarella 


Method 


1. In a bowl mix the flour, yeast and warm water. 

2. Mix the contents of the bowl, then on a clean surface knead the dough whilst adding the seasoning. Make sure that it is mixed in well. 

3. After doing so transfer the dough to a bowl and leave a damp towel over the bowl for an hour so that the dough can rise. 

4. Whilst the dough is rising, pre-heat the oven to 220oc. 

5. On a floured surface divide the dough to 4-6 balls and using a rolling pin roll the dough to thin slices.

6. Then spread the tomato puree and cheese on the pizza and add the toppings of your choice. 

7. Put the pizza on a pizza pan, f you don’t have one you can use any oven tray! ( make sure the pan is lined with either olive oil or flour)

8. Bake the pizza for 12-15 minutes until golden brown!

Ingredients

  • stir fry mix 
  • egg noodles 
  • soy sauce 
  • chicken 
  • prawns 
  • mixed peppers 
  • garlic
  • red onions
  • thyme 
  • garlic powder 
  • ginger 
  • Chinese five spice 
  • cayenne pepper 
  • Brocolli (Optional) 
  • Mushrooms (Optional) 

Method 

  1. Season the chicken slices with ginger powder, garlic powder, thyme, cayenne pepper and Chinese five spice.
  2. Then leave the chicken in the fridge to marinate for up to 1 hour. 
  3. Boil the egg noodles in a pot, and whilst this is boiling it is time to prepare the prawns. 
  4. Put a tablespoon of butter in a pan and let it melt. 
  5. Then add chopped up garlic to the pan and let it sweat, be sure not to let it burn If the heat is too high turn it low. 
  6. Add the prawns and let each side cook for 2 minutes, then season it with garlic, ginger, cayenne pepper, and Chinese five spice.
  7.  Let the prawns cook until they are pink or until they are done. 
  8. Pour the prawns into a bowl and set aside. 
  9. using the same pan, pour in the oil and add the chopped up garlic and sliced red onion. Let it sweat.
  10. Make sure that you are checking on the noodles so that they do not over boil, you don’t want them to be too soft!
  11. Once the garlic and the red onions have sweated add in the chicken and turn the heat up. 
  12. The egg noodles should be done after 20-30 minutes drain them and set it aside. 
  13. Let the chicken fry on each side for 10 minutes each.
  14. Once the chicken is done it is time to start making the stir fry.
  15. In a wok put a little bit of oil, then add the mixed peppers, mushrooms and broccoli. 
  16. Season it with a bit of salt and Maggi.
  17. After 10 minutes add in the stir fry mix and let it cook for 5 minutes.
  18. Add in the prawns and chicken, shortly after adding the noodles.
  19. Add soy sauce to give the stir fry color.
  20. After 5 minutes your stir fry is done!

How to make Oven Baked Wings 

These wings are great if you just want a simple yet tasty side.

Ingredients 

  • wings 
  • sunflower oil 
  • garlic powder 
  • all-purpose seasoning 
  • chicken seasoning 

Method

  1. As you are dealing with chicken make sure you wash your hands or alternatively you can wear gloves.
  2. Set the oven to 200c before preparing the chicken. 
  3. Drizzle the sunflower oil over the wings and rub it in. 
  4. Then pour all the seasoning on the wings and rub it in until all wings are evenly coated. 
  5. Leave the wings to marinate for up to  one hour in the fridge 
  6. Once the hour is up, place the wings on a foil-lined oven tray and place the chicken in the oven.
  7. Check and turn the chicken every 20 minutes until it’s done.
  8. After one hour in the oven, it should be done
