Chocolate Chip Cookies Recipe

 

How to make chewy cookies

This recipe will help you achieve soft, mouth-watering cookies!  These cookies are a great thing to bake if you want a sweet treat.

Ingredients

Plain Flour

1 egg and 1 egg yolk

Coco Powder 200g (For double chocolate cookies)

Baking powder 2g

Caster sugar 100g

Brown sugar 210g

Vanilla essence 15ml

Unsalted butter 180g

1 or 2 Blocks of chocolate (For a rustic feel)

Pinch of salt

Method

  1. Pre-heat the oven to 170 degrees C, and line the baking trays with grease proof paper.
  2. Roughly chop the chocolate bar and set aside. I cut medium chunks by doing it diagonally both ways.
  3. In one bowl mix together the flour, baking powder, salt and the coco powder if double chocolate cookies are desired.
  4. In a different bowl mix together the butter (the butter mixes better if it is melted), brown and white sugar. Cream these ingredients together then beat the egg and vanilla.
  5.  Into the bowl with the butter and sugar add in the flour mix. Add in the chocolate chips.
  6. Now that the cookie dough has been prepared, place it in the fridge for 20 minutes   ( you can leave it overnight).
  7. Using an ice cream scoop, scoop a bit of dough then roll it into a ball then place it on the baking tray.  Make sure that there is space between the balls as when it cooks it will flatten
  8. Repeat step 7 until all the dough has been rolled.

9.Place the tray in the oven for 15-20 minutes, the edges should be lightly toasted. Once this is achieved set it aside to cool down.

Beef Skewers

How to make Beef Skewers 

 

Ingredients 

.Irish Beef 

.Flour 

.Vegetable Oil 

.Seasoning (garlic, all-purpose seasoning, salt, curry, pepper)

.Green Peppers

.Wooden Skewers



















Method 

1. Soak your wooden skewers into warm water. 

2. Cut the beef into 2.5cm/1 inch pieces. 

3. Mix together your seasoning. Add the beef and marinade in seasoning. Cover and refrigerate for up to an hour.

4. Pre-heat the oven/grill to a hot setting (220 degrees). Thread the beef on the skewers. Place the beef skewers on a foil lined tray and grill. (Remember to turn your skewers often while in the grill)

5. Drizzle over green peppers and additional seasoning.


Cooking Time 1 hour 30 minutes

Avocado toast with sunny side egg & bacon

How to make Avocado toast with sunny side egg & bacon

Ingredients 


.Avocado 

.1/2 of a tomato

.1/4 of an onion 

.salt 

.black and white pepper 

.garlic salt 

.onion powder 

.bacon rasher 

.Multi seed bread 


Method


1. Using a sharp knife slice the avocado lengthwise until the knife touches the pit. Rotate the knife until you’ve cut all around the avocado. Then twist the two halves.

2. Use a spoon the scoop out the avocado and set it aside in a bowl. 


3. Dice the onion and tomato finely and add to the bowl.


4. Then mash the avocado together roughly, add in a pinch of salt, pepper, garlic salt and onion powder. Taste it to ensure it is flavourful. 


5. Fry an egg and bacon. To achieve the sunny side egg fry the egg in a pan as normal but instead of flipping the egg use a spoon to put oil on the top , so that the yolk is still runny. 


6.Toast seeded breaded until it is crisp, then spread the avocado on top.


7.Place the bacon rasher on top and then gently place the egg. 


8. You can add the salt and pepper on top for taste. 

9. Now you can enjoy this quick but yummy meal!




Shortbread

How to make Shortbread


Ingredients 

.Caster Sugar

.Cornflour 

.Plain Flour

.Butter, Unsalted 

.Mixed Fruits (Frozen)

.Powdered Sugar


Method 

1.Pre-heat oven to 150 degrees. Lightly grease the base of oven tray. 

2. Whisk together, butter and sugar until pale and fluffy. 

3. Add flour and stir to blend with mix, a soft and slightly crumbly dough will begin to form. (Be careful not to overhandle the dough, for a perfect shortbread texture)

4. Press the dough into oven tray and cut out your desired shapes for your biscuits. Prick each portion with a fork (three times). Bake for approximately 40 minutes.

5. When pale golden, remove the shortbreads and allow to cool. Once cool, sprinkle with powdered sugar and serve with frozen mixed fruits.

Beef and Chicken Suya sticks

Ingredients 

.Beef / Chicken

.Vegetable Oil 

.Seasoning (sea salt, cayenne pepper, paprika, onion powder, all-purpose seasoning, ginger, suya powder)

.Tomato

.Red Peppers

.Onions 

.Wooden Skewers


Method 

1. Soak your wooden skewers into warm water. (This prevents it from burning)

2. Pre-heat your oven to 200 degrees. Lightly spray your baking sheet 

3. Mix together your seasoning. Set aside.

4. Prepare your steaks and pat them dry with a paper towel.

5. Thread the steaks, covering skewers with meat.

6. Dip skewers into seasoning mix, ensuring the cover steaks in the mixture on both sides. Place skewers on baking sheets

7.Drizzle with oil and bake for approximately 10-15 minutes.

8.Serve with onions and peppers, sprinkle excess suya powder over your steaks and ENJOY!
